Correlation analysis of key aroma components and sensory properties of separation components of Yunyan essential oil by ceramic membrane

  • Using GC-MS technology to analyze the composition of the aroma components in the ceramic membrane separation components of Yunyan essential oil, the ROAV value was calculated to determine the key aroma components, and perform sensory analysis, and the partial least square method (PLSR) was used to establish the separation of the components of the Yunyan essential oil ceramic membrane PLSR model of key aroma components and sensory indicators to explore the correlation between key aroma components and sensory attributes. The research results showed that in the 50 nm Yunyan essential oil ceramic membrane retentate, there were 31 different volatile aroma substances, of which 3-hydroxy-β-damascenone and nonanal were the key aroma components, sweet fragrance had a strong correlation with 3-hydroxy-β-Damascone,and flower fragrance had a strong correlation with nonanal. In the 50 nm Yunyan essential oil ceramic membrane permeate, there were 23 different volatile substances, among which 3-hydroxy-β-damascenone and megastigmatrienone were the key aroma components, spices had a strong correlation with megastigmatrienone,and the sweet fragrance had a strong correlation with 3-hydroxy-β-damascone.
