Optimization and selection of extraction technology of corn zein

  • Corn zein was obtained via ethyl alcohol extraction method,alkali-extraction and acid precipitation method and salting-out method with corn gluten meal as raw material.Extraction conditions were optimized through orthogonal test.The results showed that ethyl alcohol extraction method was the optimal method which not only the extraction rate of zein was high,but also the denaturation degree of corn zein was weak.The optimum extraction technology of ethyl alcohol extraction method was obtained as follows:temperature 60℃,solid-liquid ratio 1 g/8 mL,time 5 h,ethanol concentration 80%;extraction rate was 82.21%,denaturation degree was 10.23%.
