Abstract
The thermal decomposition of 1-L-Alanine-1-deoxy-D-fructose(Ala-Fru) was investigated by Thermogravimetry-Differential Thermal Analysis(TG-DTA) and online pyrolysis gas chromatography-mass spectroscopy(Py-GC/MS).The analysis results of TG-DTA showed that the primary pyrolysis temperature of Ala-Fru was 147.47℃,and the residual mass was 25% of the original weight in 600℃.The pyrolysis results of Ala-Fru at 350℃,450℃,550℃,650℃,750℃ and 850℃ by on line Py-GC/MS showed that different pyrolytic compounds were obtained at different temperatures, the number of pyrolytic pruducts increased with temperature. The major of pyrolytic compounds was heterocycle including pyrazine, pyridine, pyrrole, furan etc and ketones, which were the important components of producing flavor and aroma in cigarette smoke.
