敞开式卧式陈列柜食品包温度分布的数值模拟
Numerical simulation of temperature distribution of food packages on open-type horizontal display cabinet

摘要: 研究了在不同送风风速和温湿度情况下敞开式卧式陈列柜食品的温度分布,并考察辐射传热和传质对食品温度分布的影响.结果表明:食品包温度的总体分布为左低右高、下低上高;且陈列柜送风风速增大时,食品温度降低,但冷耗增加,故风速存在最佳值;环境温度每升高2℃,食品包温度平均升高0.1~0.3℃,湿度每升高20%,其温度平均升高0.1~0.7℃.Abstract: The temperature distribution of food packages of open-type horizontal display cabinet was investigated under the different wind speed, air temperature and humidity; at the same time,the radiation and mass transfer were considered.The computational results showed that the temperature distribution of food packages is low on the left and the bottom of the food and is high on the right and the surface of the food. When the blowing wind speed of the display cabinet increases, food temperature reduces, but cold consumption increases, so there is an optimal value of the wind speed. While the ambient temperature is increased by 2℃, the average temperature of food packages rise 0.1~0.3℃; humidity is increased by 20%, its average temperature rise 0.1~0.7℃.
